4625 Convoy consists of the Dumpling Inn, which used to be a hole-in-the-wall noodle & dumpling street eatery next door and is now in the right side of the space, and Shanghai Saloon, which is a new trendy bar & lounge featuring a 30 taps craft beer (mostly local) and a full liquor/cocktail bar with emphasis on whiskey. It operates from 4pm to late night. The decor's theme is 1920-1945 Shanghai City. The map on the chalk wall is the Prime district of that time, particular to the water front section called the "Bund".

The 3rd section of the space is called the Dai-Pai-Don, which is designed to provide casual comfort food for late night bar patrons.

Dai Pai-Don Background:

"Dai pai dong" is a type of open-air food stall once very popular in Hong Kong. The government registration name in Hong Kong is "cooked-food stalls", but dai pai dong literally means "restaurant with a big license plate", referring to its size of license which is bigger than other licensed street vendors. There are only 28 such stalls remaining in Hong Kong.

The Bund in Shanghai (上海, 外灘) is a waterfront area in central Shanghai. The area centers on a section of Zhongshan Road (East-1 Zhongshan Road) within the former Shanghai International Settlement, which runs along the western bank of the Huangpu River, facing Pudong, in the eastern part of Huangpu District. The Bund usually refers to the buildings and wharves on this section of the road, as well as some adjacent areas. It is one of the most famous tourist destinations in Shanghai. Building heights are restricted in this area.
